THE WAYWARD ANNOUNCES AUGUST OPENING DATE IN CENTER CITY

The highly anticipated Brasserie will debut its outdoor dining, introducing guests to its French rooted, American style menu and expansive cocktail selection

Philadelphia, PA (July 17, 2020)The Wayward, an American Brasserie, will open its outdoor patio to the public on August 3, 2020 in the heart of Center City Philadelphia. Located in the historic Stephen Girard Building within the East Market neighborhood, the restaurant will offer flavorful and approachable American dishes that borrow inspiration from French ingredients and techniques.

The restaurant’s spacious outdoor terrace is an urban oasis complete with lush green landscaping and romantic string lighting with a mix of eclectic café tables and couches overlooking the vibrant East Market corridor. The Wayward has created an atmosphere that mirrors the bright and fresh ambiance of the restaurant’s interiors following the hallmarks of its curated menu that is both unique and approachable.

Guests will delight in an indulgent selection of dishes that perfectly introduce The Wayward’s adventurous menu concept with flavorful snacks such as corn beignets, escargot croquettes and cheese with local charcuterie accompaniments; raw bar selections of rotating oysters, chilled Maine mussels and plump Gulf shrimp; and plates such as steak frites, a hanger steak with bone marrow chimichurri, branzino almondine with green beans and fig jus, and a signature Pennsylvania-raised angus beef burger—the perfect combination of American fanfare with French inflection of caramelized onions and gruyere on pain au lait.

“Everything from the menu to the design of The Wayward was a methodical process to ensure that we were infusing Philadelphia’s rich local history, while going beyond borders of the city to bring our brasserie to life,” says Executive Chef Yun Fuentes. “We are taking the American palette for food and incorporating strong French influences to create a go-to outdoor dining destination that will appeal to our city’s unconventional spirt.”

Fuentes began his career working the restaurant circuit in his native Old San Juan, Puerto Rico, where he learned the flavors and techniques while working at a modern French restaurant that inspire his cooking today. In search of expanding his craft, Fuentes ventured to New York where he oversaw several kitchens before finding his way to Jean-Georges Vongerichten. Ultimately, he found a culinary home in Philadelphia where he has helped develop some of the city’s most well-reputed menus through his work with Garces Group and Stephen Starr. Today, Chef Yun will effortlessly combine his foundation in French cuisine with his robust Americana culinary experiences to create The Wayward’s one-of-a-kind menu.

Boasting the largest selection of gin in Philadelphia – the perfect pairing for oysters – the brasserie will also serve a hearty selection of craft cocktails including their signature French 75 and American and French wines. The exciting opening menu is accompanied by an equally as exciting bar menu with summer cocktails crafted with only fresh ingredients and The Wayward IPA, custom made and brewed locally by Iron Hill Brewery.

Open for dinner, The Wayward will also host daily happy hour from 4—6 p.m. where guest can indulge in delicious bites such as tartines, tarte flambee, Gulf shrimp, half-off oysters and libations.

Over the past few months, we’ve been navigating the fast-changing industry, taking guidance from public officials to ensure The Wayward opens with the highest standard of health safety.”

From increased table spacing at a minimum of six feet to single-use products such as menus and enhanced dining area cleaning and preparations as well as hand sanitizer stations, virtual QR code menus, and staff-required personal protective equipment, The Wayward has implemented visible cleaning and sanitizing procedures that address both guest and staff needs.
